Ingredients

  • 1/2 pound shrimp (medium, pre-cooked shrimp)
  • 2 tomatoes
  • 1 romaine lettuce (heart, torn into pieces; or iceberg lettuce)
  • 3 tablespoons avocado oil mayonnaise
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon olive oil
  • 1 teaspoon red wine vinegar
  • 1 clove garlic (finely minced or pressed)
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dill (dry or finely chopped fresh dill)
  • 1/2 teaspoon hot sauce
  • 1/2 teaspoon water

Instructions

1. Put pre-cooked shrimp in a large bowl and add cold water, let it thaw for about 10-15 minutes until no longer frozen. Drain and pat dry with paper towel, to avoid making the dressing watery.  If using raw shrimp, simply heat a pan with a bit of oil over medium heat, add defrosted shrimp, and sauté for 2-3 minutes on each side until they turn pink and opaque.
2. Prepare shrimp salad dressing. In a small bowl, combine dressing ingredients: mayo, lemon juice, olive oil, vinegar, garlic, pepper, dill, hot sauce and water. Stir well.
