These roasted zucchini, broccoli, peppers, onions and mushrooms are one of the quickest, easiest and healthiest recipes you can throw together, and mmmmm... are they so good!! One of the best ways to enjoy veggies even for vegetable haters. The flavor combination is really lovely.
1. Preheat oven to 420F (210C). 2. Place zucchini, squash, broccoli florets, onion, pepper and mushrooms in a medium baking dish. 3. Season with salt and pepper. Add avocado oil, balsamic vinegar and thyme. Toss to combine.
4. Bake in the preheated oven for about 13 minutes, until tender but slightly crisp. Enjoy!

I loved making this recipe. I used garlic and Italian seasoning instead of thyme. Yumm. Very glad to see this recipe as it’s a keeper forever. I told others about this recipe and are going to make it as well. Also my Daughters love this combination of vegetables. I think everyone that makes this recipe will be making it over and over. it is simply awesome, I am always seeking new recipes for healthy food i.e. vegetarian but I am bored with eating veggies in the same way, so tried out your recipe and it was superb. I loved it. It was a great blend of veggies and the different flavors all put together. It is a dish that is very healthy for me and very tasty for my tongue. great one, keep sharing things like this, really liked it.
I’m diabetic so I got rid of balsamic vinegar, I also skipped the broccoli, added tomatoes and Basil, and oh yeah and a jalapeño. It came out as a really good low carb side.
I took this vegetable dish, and started it out. It was delicious. But because I was cooking as an entree for 2 hungry men as well as myself, I turned it into an impossible pie recipe with lots of eggs and some cheese to make a little more protein, and the baking mix and milk provided some nice breadiness to the meal. It was so good! What a great mash up. Your wonderful combination with the vegetables and the light balsamic dressing just made it great!

I was searching for a way to use up my veggies, and found this recipe, that used EXACTLY the veggies I needed to use up. After cooking 13 minutes, I stirred and cooked for another 5 mins, and the veggies were cooked to where I like them. I had this as my dinner, so I added just a little parmesan cheese and marinara sauce, and it was delicious as a main entree. Felt good to eat such a healthy meal satisfying meal. Thanks for keeping it simple, this will always be my go to if I need to use up veggies, as you could use anything you have in the fridge.
I did not have broccoli on and but I had the other ingredients and made this. I also added chopped celery, yellow and orange peppers. This is soooo yummy!! I plan to make this again and again. Especially when I entertain. Thank you for a great recipe!

When you roast veggies, it somehow brings out the sweetness in them - I LOVE roasted veggies. Will try it next time with your seasonings/dressing.
