One-pan Greek-style chicken thighs, baked with potatoes. The recipe requires minimal attention, it's also a crowd-pleaser and perfect for company. The blend of garlic, lemon, oregano and rosemary makes every bite supremely flavorful!
1. Preheat oven to 380F (190C). 2. Place chicken thighs in a large baking dish, mine was 11" x 13" (28cm x 33cm). Season with salt, pepper, oregano and rosemary. Add lemon zest, lemon juice, minced garlic and olive oil. 3. Place potatoes in dish with the chicken thighs, toss until chicken and potatoes are coated with marinade. Keep chicken skin side up.
4. Bake in the preheated oven for 25 minutes. Remove from the oven, spoon juices over chicken and potatoes, bake for another 20 minutes, or until the chicken is nicely browned.

I found this recipe last Spring during the "lockdown." I've made some adjustments, but it's become a favorite meal in our house. A lot of other recipes I tried used chicken broth, but this recipe is the best I've found. I use 6 boneless, skinless chicken thighs since it's only 2 of us, but I like leftovers for lunch. I also omit the rosemary (not a fan), use slightly less garlic, 1 tsp. of oregano and salt and 1/2 tsp. of pepper and add extra fresh lemon juice. It comes out amazing every time. My husband who is a picky eater even likes this dish!
The flavor of the dish would be completely different. As an option, you can add chicken thighs for the last 10 minutes of cooking to warm them up. - Alena

I love 1 pan dishes. My pyrex casserole dish gets a workout. It's my go to pan when it comes to one pot dishes. This lemon chicken and potatoes dish looks pretty good.
