Ingredients
1 can coconut milk (mine was almost 14oz)
1 banana (ripe, large)
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
5 tablespoons chia seeds
banana (chopped, for serving)

Instructions
1. Add coconut milk, banana, vanilla and cinnamon to a blender cup, blend until smooth.
2. Using a spoon, stir in chia seeds. Pour into small glass jars and cover with a lid or plastic wrap. Let stand in the fridge for a few hours or overnight.
3. Top with chopped banana and serve.
