1. Heat the vegetable oil in a skillet over medium-high heat. Cook chicken breasts until browned on both sides. Add barbecue sauce, reduce heat, cover and simmer for 50 minutes.
2. Meantime, cook bacon. Place the bacon slices side by side in a cold skillet. Place the skillet over medium heat. Turn the bacon when it releases easily from the pan. Cook the other side and keep turning and cooking until crisp. Place cooked bacon on paper towel to drain.
3. Place 2 slices cooked bacon on each chicken breast. Top with cheese and wait until the cheese melts. Serve with broccoli and rice or your favorite side dish.
