This crispy baked fish recipe is ready in less than 30 minutes. A simple addition of garlic, parsley and green onions combined with olive oil, butter, breadcrumbs and egg makes this healthy fish taste great. You can substitute haddock or tilapia for cod.
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a small saucepan, heat olive oil, butter and smashed garlic. Remove from heat and let infuse for 5 minutes, then discard the garlic.
3. In a medium bowl, combine bread crumbs, parsley, green onions and pepper. Add the oil mixture and egg, season with salt, mix well.
4. Season the fish fillets with salt to taste, place in a baking dish and top with the bread crumbs mixture.
5. Bake in the preheated oven for about 17 minutes, or until breadcrumbs are golden and fish flakes easily with a fork.

Followed the recipe but the bread mixture did NOT stick to the fish at all. It was a crumbly mess.
Sorry to hear about your bad experience. In this recipe you're not supposed to coat the fish, the bread crumb mixture is used as a topping. If the mixture was sliding from the top of the fish, most likely the fish was wet. Let me know if I can help to further troubleshoot ;) - Alena
