Crunchy, light and refreshing cucumber salad tossed in seasoned rice vinegar with dill. Works great as a side salad for meat.
Ingredients
1 cucumber (I used English cucumber, but regular will work also, you can peel it)
2 tablespoons seasoned rice vinegar
1 teaspoon water
1 teaspoon dill (dry or finely chopped fresh)
1/4 teaspoon salt
1/4 teaspoon pepper
Yield: 2 Servings | Prep time: 10 minutes |

Instructions
1. Cut cucumber in half lengthwise, then slice into half moons.
2. Transfer cucumber slices to a bowl, add vinegar, water, dill, salt and pepper. Toss and refrigerate for at least 20 minutes.

I have made this many, many times. Very good and very easy. I also added 1/2 red onion sliced very thin. This is my favorite salad recipe. Great for a dinner side.
