1. In a medium bowl, combine milk with vinegar and let stand for 5 minutes to "sour".
2. In a large bowl, combine flour, baking powder, baking soda, white sugar and salt.
3. Whisk egg and butter into "soured" milk. Gradually whisk the flour mixture into the milk mixture, making sure to beat out all lumps.
4. Heat the oil in a large skillet over medium heat. Pour or scoop the batter, using approximately 1/4 cup for each pancake.
5. Turn when bubbles appear on top of pancakes. Cook until lightly browned on the other side. Repeat with the remaining batter.
