You've probably eaten pancakes, but have you tried these two-ingredient, no flour, no added sugar, sweet and healthy banana pancakes? These are super easy to make and will work great for toddlers. You can also try adding cinnamon or vanilla to the batter. I usually double or even triple the recipe and serve them for breakfast with Nutella and strawberries.
Ingredients
1 egg (medium)
1 banana (ripe, medium)
olive oil
Yield: 7 small pancakes | Prep time: 3 minutes | Cook time: 5 minutes | Total time: 8 minutes

Instructions
1. Mash banana really well. Add egg and mix well.
2. Heat a skillet over medium heat, spray with cooking spray (or brush with olive oil). 3. Reduce the heat. Spoon out small round pancakes (about 1 tablespoon of batter for each). Let brown on one side, flip over and cook the other side.
4. These pancakes can be served with butter, nutella and strawberries, blueberries or peanut butter.
