Homemade Ground Chicken Nuggets
These homemade chicken nuggets (I also call them mini patties) are one of the easiest things to do with ground chicken. Have you ever tried making chicken burger from chicken breast? You simply need to grind chicken in food processor to get a tender base. Adding onion, garlic and paprika adds depth to the flavor of the nuggets. This chicken nugget recipe with ground chicken can be used in a variety of ways, whether it's in mini burgers, as a protein-packed addition to salads or along with a side dish of mashed potatoes for a comforting and delicious dinner (my kids absolutely love the last option :))

Ingredients

  • 3 chicken breasts (medium, skinless, boneless)
  • 1 cup cauliflower (riced, I used frozen)
  • 1 egg
  • 1 onion (medium)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon ground black pepper
  • 1/3 cup Parmesan cheese (finely grated)
  • 3 tablespoons tapioca starch
  • 1/2 teaspoon smoked paprika (for coating)

Instructions

1. Preheat oven to 400F (200C).
2. If using frozen cauliflower rice, thaw it first and use paper towels to remove excess liquid.
3. Place chicken breasts, cauliflower, onion, egg, garlic powder, paprika, parsley, salt and pepper in a food processor and process until the meat is thoroughly minced.


4. On a separate plate, combine coating ingredients: Parmesan, tapioca starch and paprika.
5. Form nuggets: drop ground chicken clumps into the coating mixture, then form oval shapes. You can make them as little or as large as you wish.

6. Transfer nuggets to a baking sheet lined with parchment paper and bake for 10 min, flip and cook for another 8-10 minutes, until cooked through.
