Instructions

1. Combine all the marinade ingredients in a large zip loc bag: oil, lime juice, garlic, cumin, onion powder, paprika, chili powder, oregano, salt, and fresh cilantro. Add boneless skinless chicken thighs, toss around and marinate in refrigerator for at least 3 hours (better overnight, for maximum flavor).

2. Heat oil in a large skillet over medium-high heat. Cook marinated chicken thighs over medium heat for about 6-7 minutes per side (flipping once). Cooking time may vary depending on the chicken thigh thickness. Continue cooking until the internal temperature measured by a meat thermometer reaches 165F (74C).

I made this exactly as written, and marinated it for over 24 hours. I found it lacking in flavor. I mean flavorless. I even seared the thighs in a cast iron pan before I put them in the oven. They did look good though.

Thank you! I rinse chicken only if I don't like how it feels to my hands (like a little slimy, for example), otherwise I don't rinse, but almost always pat dry with paper towels. Good luck! :) - Alena
