Seared sea scallops are easy and quick to cook and very delicious. In this recipe, sea scallops are seared in a basil-infused butter. Pay careful attention to the cooking time, because it's important not to overcook them, or they will be rubbery.
1. Rinse scallops in cold water and pat dry with paper towels.
2. Combine butter and basil. Using your hands, roll the mixture into a ball.
3. Season scallops with salt and pepper on both sides.
4. In a large skillet, heat oil over high heat.
5. Add scallops (it's better when they are not touching each other, cook in batches if necessary) and sear for 1 1/2 minutes on each side.
6. Move scallops to one side of the skillet, add butter. Cook scallops for another 30 seconds, spooning the melted butter over them.
7. Serve immediately.
