Cassava Flour Waffles Recipe
Have you been looking for a delicious and easy gluten-free waffles recipe? Then you’ve come to the right place. I’ve been experimenting with gluten-free waffles for some time, and this recipe is everything you want in a waffle. The waffles come out soft, fluffy, and crispy on the edges. We love them with a quick strawberry sauce.

Ingredients

  • 2 eggs (whites and yolks separated)
  • 1 1/2 cup cassava flour
  • 1 1/2 cup almond milk
  • 1/2 cup avocado oil
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

  • 1 1/2 cup strawberries (the tops cut off)
  • 1 tablespoon maple syrup

Notes

I use cassava flour for this recipe. Compared with other gluten-free flours, cassava flour is low in calories, fat and sugar. I usually buy it from Amazon, here’s the link to my favorite cassava flour brand.

Instructions

1. Separate egg whites from yolks. Beat egg whites with an electric mixer until stiff peaks form.
2. In a large bowl (I prefer a bowl with a spout), whisk together the rest of the ingredients: cassava flour, baking powder, salt, egg yolks, almond milk, avocado oil, maple syrup and vanilla extract. Use a flipping motion to fold the beaten egg whites into the batter.

3. Preheat your waffle maker to medium heat. Grease it if needed (some waffle irons don’t need to be brushed with oil). Pour the batter almost to the edges (leaving some room for expansion).

4. Cover and cook until the desired color / crispiness is achieved. Repeat with the rest of the batter.
5. While cooking the waffles, prepare the sauce. Place strawberries and maple syrup in a blender and process until smooth. Serve waffles warm topped with the strawberry sauce.

Nice alternative to our usual waffles!

Pleasant flavor and very nice texture. If I didn’t make them myself I probably wouldn’t have known they were gluten-free. I served mine with fresh berries and homemade whipped cream!
