1. In a large skillet, heat olive oil and butter over medium-high heat. Season chicken pieces with salt and pepper. Cook until golden brown on both sides (about 4 minutes per side, turning once). Transfer chicken to a plate.
2. Add garlic to the skillet and saute stirring for 1 minute.
3. Pour in chicken broth and cream, stir. Cook for 3 minutes.
4. Add mustards and finely chopped thyme. Cook until thickened, about 3 minutes. Taste the sauce and adjust ingredients (if necessary).
5. You can return chicken to the skillet, if you want to heat it through. Spoon the sauce over the chicken and serve.

Thyme is such an underrated herb and recipes like this remind me why I need to make a point of using it more often. I love that the flavor is allowed to shine in this rich, creamy sauce.
