  • 6 potatoes (medium)
  • 1/4 cup avocado oil
  • 4 teaspoons lemon juice
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • parsley (chopped, for serving)

Instructions

1. Bring a large pot of water to a boil.
2. Preheat oven to 400F (200C).
3. Cut potatoes into thick wedges.

4. In a small bowl, combine avocado oil, fresh lemon juice, thyme, oregano, garlic powder, dry mustard and salt.

5. Add potatoes to the pot with boiling water and cook for 5 minutes.

Thoroughly drain the potatoes, add the seasoned oil mixture, toss and transfer to a large rimmed baking sheet (in a single layer).


6. Roast potatoes in the preheated oven for about 30-40 minutes, until golden brown. Top with chopped fresh parsley and serve.
