Ingredients

  • 2 cups rice (white)
  • 1 can coconut milk (unsweetened, full-fat, 14 oz / 400 ml per can)
  • 1 cup water
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • 1/2 tablespoon lime juice (+ lime zest for garnish)

Notes

To store leftovers, allow the rice to cool to room temperature before transferring it to an airtight container. It can be kept in the refrigerator for up to 4 days while maintaining its delicious texture. The easiest way to reheat is to simply warm it on the stove top with a splash of water.

Cooking time may slightly vary depending on your oven and the type of rice used. Be sure to check for doneness and adjust accordingly to get perfect rice.

Instructions

1. Preheat the oven to 380°F (190°C).
2. Rinse white rice under cold water until the water runs clear. Use a mesh strainer for best results.
3. In a saucepan, combine full fat coconut milk, water, maple syrup, and sea salt. Heat the mixture until it is just about to boil, then remove from heat.

4. Transfer the rinsed rice to a baking dish (an 8-inch square glass dish works well). Pour the heated coconut milk mixture over the rice.

5. Cover the dish with foil and bake in the oven for 45 minutes.

6. After 45 minutes, remove the foil. The cooking rice should be tender and most of the liquid absorbed. Add fresh lime juice, and stir. Turn off the oven and leave the rice, still covered, in the hot oven for an additional 10-15 minutes to complete the cooking process. Garnish cooked rice with lime zest before serving. Enjoy!
