This Chicken and Zucchini Bake recipe is so easy to make but it tastes really good, it's one of those meals that you feel good about. This bake is Whole30 compliant and has simple healthy ingredients: chicken, zucchini, onion and garlic, all seasoned to perfection. Baking zucchini seals in their flavor, you can adjust cooking time to make them firmer or softer. Believe me, it's quite delicious!
Ingredients
6 chicken thighs (skinless, boneless, cut into quarters)
1. Combine chicken, garlic, lemon zest and half of the Italian seasoning. Season with salt and pepper. 2. Slice zucchini into rounds, slice onion into half moons. Combine zucchini with the rest of the Italian seasoning, season with salt and pepper. Sprinkle sliced onions with salt, pepper and squeeze a few drops of lemon juice.
3. Preheat oven to 400F (200C). 4. Heat olive oil in a large skillet over medium-high heat. Brown chicken for 2-3 minutes per side. 5. Add zucchini and onions, toss (make sure you use an oven proof skillet). Bake for 15 minutes, until zucchini are tender and chicken is cooked through.
8. Drizzle with some lemon juice before serving.

I added some red chilli flakes to the chicken seasoning and balsamic to the veg but still was missing something. It needed more flavor. It was an easy dish tho and maybe with a sauce could be good. I served it with gnocci with butter permeaan and a tiny bit of truffle cheese melted in
