1. In a large bowl mix together ricotta, eggs, sugar, salt, vanilla, baking powder and flour until smooth.
2. In a large skillet, heat the oil over medium heat. Drop a tablespoon-full of the mixture onto the skillet and press it down lightly with a spatula (wet your spoon with water before making another pancake). Alternatively, you can wet your hands in cold water (to prevent sticking) and form a small round pancake then drop it onto the skillet.
3. Cook for 3-4 minutes per side, until golden brown, flipping once.
4. Serve with sour cream and jam, berries, maple syrup or any of your favorite topping.
