  • 2 teaspoons water
  • 2 tablespoons pancetta (diced)
  • 2 tablespoons Mozzarella cheese (grated)
  • salt (to taste)
  • 1 tablespoon avocado oil
  • microgreens (for serving)

1. Separate egg yolks and whites. Add water to the egg whites, season with salt and beat slightly with a fork.

2. Stir the egg yolks and transfer them to a ziplock bag.

3. Heat oil in a skillet over medium heat. Cut a corner of the ziplock bag containing the egg yolks. Use the yolks to draw a Christmas tree shape in the skillet, when set, use a wide spatula to move it to one side of the skillet. If you're not satisfied with how the tree looks, easily adjust it with the spatula.

4. Add the egg whites around the yolks tree, ensuring they don't cover the tree. Allow the eggs to set.

5. Once the eggs are set, carefully flip the omelette onto a lid. Slide the flipped omelette back into the skillet, so it appears upside down.
