A great flourless waffle recipe that uses real fruit instead of sugar and almond butter instead of flour. You will feel really good serving these to your kids for breakfast. Top with fresh berries and maple syrup, or blend some frozen berries with a splash of water / maple syrup to make a quick healthy sauce. Bonus: these waffles freeze well.
1. In a blender, puree apple and banana until smooth. 2. Put almond butter in a medium mixing bowl, beat on medium with a mixer for 1 minute. Add the rest of the ingredients and beat until combined.
3. Preheat waffle iron (use the LIGHT setting) and brush with some oil (I used a little more avocado oil after 2nd waffle). Scoop the batter into your waffle iron in batches, cook until golden brown. Serve immediately or store in zip close bags in freezer.
