High Protein Arugula & Prosciutto Breakfast Sandwich

Mornings just got better with this quick, high-protein breakfast sandwich recipe - the perfect way to start your day.

My husband first tried a similar sandwich at First Watch and loved it so much that I knew I had to recreate it at home. Now it’s one of the favorite healthy breakfast sandwiches in our house, and we make it at least once a week.

Fluffy scrambled eggs, prosciutto, and my favorite ingredient - arugula dressed in olive oil and lemon - come together on toasted sourdough for a great twist on a classic egg breakfast sandwich. It’s ideal for busy mornings or simple meal prep, and takes just minutes of your time to whip up.

Ingredients

  • 1 slice bread (I use sourdough bread, but can be a slice of whole grain bread or toasted English muffin)
  • 2 eggs
  • 2 slices prosciutto
  • 1 cup baby arugula (fresh, packed)
  • 1/2 lemon
  • 1 tablespoon Parmesan cheese (grated)
  • 1 tablespoon avocado oil mayonnaise
  • 1 clove garlic (finely grated)
  • 1 teaspoon olive oil (for arugula)
  • 1/2 tablespoon avocado oil (for cooking eggs)
  • salt

Instructions

1. Place a slice of a sourdough bread in a toaster oven (or regular toaster) and toast until golden.
2. Make the lemon-garlic mayo. In a small bowl, stir together mayonnaise, a little bit of lemon juice, grated garlic (to taste), salt, and pepper.

3. In another bowl, toss arugula with olive oil, a squeeze of lemon juice, and a pinch of salt.

4. Make scrambled eggs. Crack eggs into a cup and whisk lightly with a fork until combined.

5. Heat a skillet over medium heat and drizzle with avocado oil. Pour in the egg mixture, let edges set, then gently fold with a spatula until just cooked through.

6. Assemble the sandwich. Spread the lemon-garlic mayo on the toasted bread. Layer on scrambled eggs, then prosciutto. Top with dressed arugula.

Notes

If you have any leftovers, wrap the assembled sandwich tightly in plastic wrap or parchment paper, or store the eggs, prosciutto, and arugula separately in airtight containers in the fridge for up to 2 days.
