You will not believe how tender pork gets by using this method! The secret of this tasty and melting in your mouth meat is in marinating it for at least 3 days, then cooking it at 300 (150C) with mirepoix (French name for a combination of onions, carrots and celery). My friend Anna Owens shared this recipe with me.
1. Place the water in a large pot, season well with salt, add peppercorns, bay leaves and wine. Bring the mixture to a boil, let it cool and pour it over the meat (remember, it should cover the meat). Leave it in the fridge for at least 3 days.
2. Prepare mirepoix. Cut celery, carrot and onion into desired sizes.
3. In a medium skillet, heat 1 tablespoon vegetable oil and sear the meat on all sides.
4. Preheat oven to 300 F (150C).
5. Transfer the vegetables to a baking dish, add some of the marinade and place the meat on top. Cover with foil and bake for about 1 hour, or until thermometer reads 150 degrees F (65-66C).
