Pan Seared Lamb Loin Chops
These lamb loin chops seared in cast iron skillet are juicy inside with a light garlicky crust outside. Deeee-licious!! If you have any leftovers and reheat them the next day, they are still mouthwatering! P.S. This is the promised link for a good cast iron skillet.

Ingredients

  • 2 pounds lamb loin chops
  • 4 cloves garlic (finely grated)
  • 3 tablespoons olive oil (leave 1 tablespoon to coat skillet)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon thyme
  • 1 teaspoon salt
  • 3/4 teaspoon pepper
  • 1/3 cup chicken broth
  • 1 tablespoon butter (or ghee for Whole30)
  • parsley (chopped, for serving)

Instructions

1. In a small bowl, combine garlic, olive oil (leave 1 tablespoon to coat skillet), lemon juice, thyme, salt and pepper.

2. Rub all sides of lamb loin chops with the mixture.

3. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and when it's hot, add lamb chops. Sear 4-5 minutes per side (trying not to move the lamb).

4. Transfer loin chops to a plate.
5. Make sauce. Add chicken broth to the same skillet and stir scarping off any bits stuck to it. Simmer the sauce for 2 minutes. Add butter or ghee, stir.

6. Return lamb loin chops to the skillet, and cook additional 4-5 minutes for medium/medium well (occasionally turning). Safe cooking temperature for lamb according to the USDA is 145F (63C).
7. Drizzle with the sauce, sprinkle with fresh chopped parsley and serve.

Didnt want or need much sauce cuz we always grill them. Turned out nice on skillet. Luv rare meat so did not do each side quite as long.

Not enough liquid for sauce

The chops were perfect. I drained the sauce through a strainer to remove charred bits. Suggest adding stained sauce in a separate pan and adding more bone broth or chicken stock so there is more sauce. The liquid evaporated quickly leaving a thick gummy syrup.

Broth & Spice

I loved the flavor, but the "1/8 cup chicken broth" burned up immediately - I suspect you intended more. Also, I suspect the recipe is intentionally bland - but for anyone who prefers spice, like me, adding "Slap ya Mamma" or similar makes it just right.

Made tonight, very good

I've never cooked lamb before, only eaten. Thus was simple, I left sit in the marinade about 20 minutes while prepping dinner. So very flavorful, the sauce helped keep moist. I don't have a cast iron pan but used my copper chef skillet and worked well

The recipe calls for 1/3 TEASPOON of chicken broth which is hardly any at all. Did you mean 1/3 CUP of broth??

Turned out SO GOOD! I let the lamb rest out of the fridge for about an hour before starting to cook. Didn't touch it when searing, came out so juicy! My friends were licking the bones! Fabulous yet simple recipe!

This is a great recipe for lamb loin chops cooked in a cast iron skillet. A cast iron skillet is something that my mom always loved to cooking in because the food just came out better. I have never made lamb before so this is a recipe I will have to try. Thanks for sharing the recipe.
