Seared Paleo Chicken with Creamy Garlic Sauce
It’s an amazing delicious chicken meal that is so simple to throw together. Enjoy it with a side of blanched broccoli, roasted veggies or a simple salad. It’s really great for those days when you don’t have a lot of time to be hanging out in the kitchen. Paleo, gluten-free, dairy-free and Whole30.

Ingredients

  • 2 chicken breasts (cut in half, I had one large and one medium, so I cut the large one in 3 pieces)
  • 1 tablespoon avocado oil
  • Italian seasoning
  • salt
  • ground black pepper

  • 2 tablespoons avocado oil mayonnaise
  • 1 tablespoon coconut milk (full fat, from a can, stir before measuring)
  • 1 tablespoon Dijon grainy mustard
  • 1 tablespoon nutritional yeast
  • 1 tablespoon water
  • 1 clove garlic (finely grated)
  • 1 teaspoon avocado oil
  • ground black pepper

Instructions

1. Heat oil in a large skillet over medium-high heat. Sprinkle chicken with Italian seasoning, salt and pepper on both sides. Sear for about 6-8 minutes per side, until golden brown and cooked through.

2. Meanwhile, prepare the sauce. In a bowl, mix together mayo, coconut milk, mustard, nutritional yeast, water, finely grated garlic, avocado oil and pepper.

3. Serve chicken topped with the sauce.
