Smoked Salmon & Egg Salad Sandwich with Green Onions

Introducing my new Smoked Salmon Sandwich. If you loved my Salmon Bagel Sandwich recipe, you'll adore this delicious recipe too. It's a good sandwich for a light meal and a great way to mix up your breakfast routine. 

I start with a toasted slice of bread, then spread it with flavorful egg salad. Next comes the star of the show: tender smoked salmon pieces. I finish this simple sandwich with a sprinkle of chopped green onions for some fresh flavor.

This easy-to-make sandwich is a delicious option for any time of the day.

Ingredients

  • 1 slice bread
  • 3 ounces smoked salmon
  • 2 eggs (hard boiled)
  • 1 tablespoon avocado oil mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 green onion (or chopped chives)
  • salt
  • ground black pepper

Notes

While white bread works fine, I personally recommend sourdough or rye bread for these salmon sandwiches, as smoked salmon pairs very well with their flavors.

If you prepare this salmon sandwich recipe ahead, it would be a good idea to wrap it tightly in plastic wrap or place it in an airtight container, then refrigerate for up to 24 hours. For best flavor, enjoy on the same day.

Instructions

1. Begin by toasting a piece of bread on a skillet. You can do it by lightly spreading some ghee on each side of the bread piece before toasting.

2. While the bread is toasting, finely chop green onion.

3. In a medium bowl, combine boiled eggs, avocado oil mayonnaise, Dijon mustard, and the majority of the chopped green onion (leaving some green parts for topping). Season with a little salt and black pepper to taste.

Mash the mixture with a fork until well combined.

4. Spread the egg salad mixture evenly on top of the slice of toast. Layer the smoked salmon pieces on top of the egg salad. Sprinkle the reserved chopped green onion over the smoked salmon. Enjoy!
