Ingredients

  • 8 chicken legs
  • 2 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon coconut sugar
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon black pepper

  • 1/4 teaspoon black pepper

Notes

For a quicker cooking time, you can grill these chicken legs on the direct heat side of your gas or charcoal grill.

You can also try making air fryer butterfly drumsticks. Make sure to place them in a single layer in the air fryer basket.

All these methods offer an efficient way to achieve crispy and flavorful results.

Instructions

1. Preheat oven to 400F (200C).
2. Butterfly chicken legs: using a cutting board and a really sharp knife, make a parallel cut down the leg in the center, touching the bone. Then make two more cuts on each side of the chicken leg bone. Push the meat flat.

3. Prepare the dry rub. In a small bowl, combine smoked paprika, onion powder, garlic powder, coconut sugar, salt, mustard powder and black pepper.

4. Season butterflied chicken drumsticks with the spice rub on all sides. Transfer to a baking sheet and bake for about 30-35 minutes. The internal temperature of butterflied chicken legs, as measured with a meat thermometer, should reach a minimum of 165F (74C).


5. Meanwhile prepare the sauce. In a small bowl, stir together mayo, finely grated pickle, apple cider vinegar, mustard, hot sauce, maple syrup, garlic powder and black pepper. Taste and season with a little salt, if necessary.

6. Remove chicken legs from the oven, dip each into the sauce and serve.
