Spiced Chicken Lollipops with Flavorful Ghee Sauce
Chicken drumsticks have never tasted so good. Whether you're hosting a gathering or seeking a delightful meal for your loved ones, these Spiced Chicken Lollipops with Flavorful Ghee Sauce are a guaranteed crowd-pleaser. The crispy, golden-brown exterior gives way to tender, juicy meat that's been lovingly seasoned with a blend of paprika, garlic powder, onion powder, cumin, and chili powder. As if that weren't enough, the lollipops are further elevated by a drizzle of my special ghee-based sauce, infused with garlic, maple syrup, and a touch of red pepper flakes for a hint of heat.

Ingredients

  • 14 chicken legs
  • 2 teaspoons salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder

  • 1/3 cup ghee
  • 2 cloves garlic (finely grated)
  • 1 tablespoon maple syrup
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • cayenne pepper (a pinch)

Instructions

1. Preheat oven to 400F (200C).
2. Prep chicken legs into lollipop style. Cut all around the narrow part of the bone.

Trim off any excess tendons, then using a paper towel pull the skin off, so that the clean bone can be seen. Repeat with the rest of the drumsticks. If you want your chicken lollipops to stand, you can also cut off the angled part of the leg (optional).


3. In a small bowl, combine salt, paprika, garlic powder, onion powder, cumin and chili powder.

4. Thoroughly coat chicken in seasoning.

5. Cook in the preheated oven for about 40 minutes, until nicely browned and cooked through.

6. Meanwhile, prepare the sauce. In a small saucepan combine ghee, finely grated garlic, maple syrup, red pepper flakes, thyme, marjoram, oregano, basil and a pinch of cayenne (or more for extra heat).

Simmer for a couple minutes, until it slightly thickens.

7. Coat the chicken lollipops in the sauce and serve.
