Ingredients

  • 1 1/2 pound beef (I use sirloin)
  • 8 potatoes (medium, I prefer less starchy red potatoes for this recipe)
  • 1 onion (medium)
  • 1 bell pepper (red)
  • 3 cloves garlic (minced)
  • 3 teaspoons ginger (I use frozen ginger cubes from Trader Joe's)
  • 2 bay leaves
  • 13 ounces coconut milk (canned)
  • 1 cup water
  • 3 tablespoons avocado oil
  • 2 teaspoons turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cayenne pepper (more to taste)

Notes

For this recipe, I used top sirloin steak, you can enhance the flavors further by opting for different cuts of beef like marbled chuck steak or beef chuck roast. 

Easily adjust the spiciness to your preference by adding more or less cayenne pepper. For those who enjoy an extra kick, consider adding red pepper flakes for an additional layer of heat.

For storing leftovers, place them in an airtight container and refrigerate. This coconut beef curry will remain fresh for approximately 3-4 days. Reheat over medium heat, stirring occasionally. Add a little water if the sauce is too thick.

Instructions

1. Cut beef into cubes, chop onion and bell pepper, mince garlic.

2. Heat avocado oil in a Dutch oven over medium-high heat. Brown beef cubes in 2 batches on both sides for about 6-8 minutes each.

3. Add chopped onion and red bell pepper to the Dutch oven. Cook for a few minutes until softened. Add minced garlic cloves, ginger, and all the aromatic spices (ground turmeric, coriander, cumin, paprika, cloves, cardamom, cinnamon, nutmeg, cayenne pepper). Cook, stirring continuously, for a couple of minutes until fragrant.

4. Pour in coconut milk and water. Stir well to combine. Return the cooked beef cubes to the Dutch oven. Add bay leaves and season with salt. Cover and simmer over low heat for 30 minutes.

5. While the curry simmers, peel and cut potatoes into cubes.

After 30 minutes, add the potato cubes to the curry stew.

Bring to a simmer again and cook for an additional 25-30 minutes, or until the potatoes are tender and the beef is cooked through. Adjust salt if necessary, to taste.
6. Optional: Finish with a sprinkle of sugar and a little bit of lime juice for added flavor. Serve hot with white rice or enjoy on its own. Garnish with fresh chopped parsley and lime wedges.
