Crispy Rice Paper Shrimp and Vegetable Pancakes

I’ve been hooked on these crispy rice paper vegetable pancakes with shrimp - they make such a delicious light meal!

They’re kind of like spring rolls but in pancake format, quick to make, fresh, and really satisfying. The rice paper gets golden and crunchy in the pan, and the mix of shrimp, cabbage, carrots, and spring onions makes the filling so good.

Once you get the hang of this rice paper pancake recipe, you can switch things up adding a variety of vegetables of your choice - bell peppers, zucchini, mushrooms, or even spinach . Dip them in a little soy sauce (add a drop of sesame oil if you like), and you’ve got a fun, easy lunch that’s full of flavor.

Ingredients

  • 6 rice paper sheets (round)
  • 1 cup shrimp (raw, chopped)
  • 1 1/2 cup green cabbage (shredded)
  • 1 carrot (medium, grated)
  • 2 scallions (chopped)
  • avocado oil (for frying)
  • soy sauce (for serving)

Instructions

1. Thinly slice cabbage with a knife, grate carrot using a box grater.

Chop scallions. Transfer the vegetables to a bowl and stir them together.

2. Pat raw shrimp dry with paper towels, then chop into small pieces and set aside.

3. Add a little oil to a skillet and warm it over medium heat.
4. Soften rice paper. Submerge one rice paper sheet in warm water for about 10 seconds until pliable. Gently shake off excess water. Place the softened rice paper directly in the hot oiled skillet.

5. Quickly top with shrimp, cabbage, carrot, and scallions, leaving some space on the edges.

6. Soften another rice paper sheet and place it on top to enclose the filling. Press down gently with a spatula. Fry for 3-5 minutes on one side until golden brown.

7. Flip carefully and cook the other side until crispy and the shrimp are cooked through.
