Easy French Apple Cake Recipe (Gâteau Invisible)

This layered apple cake is the perfect recipe to enjoy during apple season! Packed with lots of thinly sliced fresh apples and just enough batter to bind them, this easy cake is a light and fruity treat.

With only 1/2 cup of flour, the focus remains on the apples, resulting in a tender apple cake. Known among French desserts as Gâteau Invisible, this cake gets its name from the way the apples seemingly disappear into the batter when baked.

Simple to prepare, this recipe is perfect for when you want all the cozy apple flavors without a heavy, dense batter.

Try it - it's probably one of the easiest cakes you can enjoy as a treat or even for breakfast. You'll fall in love from the first time you taste it, as it melts in your mouth!

Ingredients

  • 2 eggs (I use large eggs)
  • 1/2 cup powdered sugar (or confectioner's sugar, + a little more for dusting)
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 2 tablespoons butter (unsalted, melted)
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • salt (a pinch)

Notes

I used Gala apples for this recipe, but Pink Lady, Granny Smith, or Honeycrisp apples will work too. Keep in mind, the type of apple can affect the sweetness of the cake.

Store any leftovers of this yummy cake covered with plastic wrap or in an airtight container in the refrigerator for up to 3 days. Enjoy cold or gently reheat before serving!

Instructions

1. Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper.
2. In a large mixing bowl, whisk together whole eggs, powdered sugar, and vanilla extract until smooth.

3. Add the milk and melted unsalted butter to the mixture and whisk again. Gradually add the dry ingredients (flour, baking powder, and a pinch of salt) to the wet mixture, constantly whisking until the cake batter is smooth.

4. Peel the apples, then thinly slice them using a vegetable peeler. Discard the peels and fold the apple slices into the batter.

5. Pour the apple mixture into the prepared pan and spread it evenly. Flatten the top of the cake using a rubber spatula or a spoon to gently press down any apple slices that stick out.

Bake for 1 hour, until lightly golden brown and a toothpick inserted into the center comes out clean.
6. Let the apple cake cool in the pan for a little bit, about 10-15 minutes, then carefully transfer it to a wire rack to cool completely. Once fully cooled and set, sprinkle with powdered sugar before serving.
