Easy Spiced Fish and Lime Rice Bowls with Veggies

This spiced fish with lime rice bowl is one of my favorite ways to enjoy fish and is an easy dinner idea that's perfect for busy nights.

Packed with flavorful spiced cod bites, warm rice, and topped with fresh veggies, it's a delicious and satisfying meal.

You can easily customize it to your taste by switching up the toppings. And to finish it off, don’t forget the creamy sriracha lime mayo - it adds just the right amount of kick to bring everything together!

Ingredients

    For the Fish:

  • 20 ounces cod fillets
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • cayenne pepper (a pinch)
  • salt (to taste)
  • 1 tablespoon avocado oil (or light olive oil)
  • For the Rice:

  • 1 cup rice (I used white rice)
  • 2 teaspoons avocado oil (or olive oil)
  • 1 clove garlic (finely grated)
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 teaspoon lime zest
  • For the Sauce:

  • 1/4 cup avocado oil mayonnaise
  • 1 teaspoon sriracha sauce
  • 1 teaspoon lime juice (freshly squeezed)
  • Toppings:

  • 2 carrots
  • 2 cucumbers (I use Persian cucumbers)
  • 5 radishes
  • 1 onion (red, small)

Notes

A mild white fish works best for this fish rice bowl recipe. I used cod, but mahi mahi, halibut, or any similar options you can find at your grocery store would work perfectly too.

To make this dish even healthier, you can swap the white rice for brown rice, or try making cilantro lime cauliflower rice for a low carb option.

Feel free to get creative with the toppings by adding your favorite things! I use sliced carrots, cucumbers, radishes, red onion, and chopped cilantro. The ingredients I suggest keep well making this recipe great for meal prep. 

You can also try other toppings like pico de gallo, avocado, black beans, purple cabbage, coleslaw mix, romaine lettuce, or even fresh mango salsa for a tropical twist.

Switch up toppings each time you make this delicious recipe. With so many different ways to serve, it feels like a whole new dish every time!

 

Instructions

1. Preheat your oven to 400°F (200°C).
2. Pat dry fish fillets with paper towels to remove excess moisture, then cut them into bite-sized pieces.

3. Combine the cod pieces with paprika, onion powder, garlic powder, Italian seasoning, cayenne pepper, salt, and oil. Toss until the fish is evenly coated with the spice mixture.

4. Prepare a baking sheet with a rack for better airflow and even cooking. Spray or brush the rack with oil, then place the seasoned cod pieces on top.

Bake for 10 minutes or until the fish flakes easily with a fork.

5. Cook the rice according to package instructions. Once cooked, stir in oil, finely grated garlic, fresh lime juice, and lime zest for a citrusy flavor. Season with salt to taste.

6. Prepare the toppings. Julienne carrots, slice cucumbers, radishes, and red onion. Chop the cilantro.

7. Make the sauce. In a small bowl, whisk the sauce ingredients - mayo, sriracha, and freshly squeezed lime juice - until smooth and well combined. Transfer the sauce to a ziploc bag and snip off a small corner for drizzling.

8. Assemble the bowls. Divide the rice between bowls, place the cooked fish on top, and arrange the fresh veggies around. Drizzle the sauce over the bowls and garnish with chopped cilantro and lime wedges.
