Homemade Pork Breakfast Sausage (Easy Recipe)

I enjoy good pork breakfast sausage, but when I can't pronounce some of the ingredients in grocery store-bought varieties, I question if they're really a good choice.

Fortunately, homemade breakfast sausage patties are very easy to make. They require no special equipment, just a little bit of preparation, and they provide a delicious and quick breakfast.

My homemade breakfast sausage recipe is far better than store-bought breakfast sausage and will elevate your breakfast food to a whole new level of deliciousness.

Ingredients

  • 1 pound ground pork
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (if you like spicy sausage, add more)
  • salt
  • 1 tablespoon avocado oil

Notes

Store leftover homemade breakfast sausage patties in an airtight container in the fridge for up to 3-4 days. If you're making a large batch, you can freeze them. Place the patties in a freezer bag either in a single layer or with parchment paper between each patty to prevent them from sticking together.

You can easily adjust the flavor of this sausage patty recipe to your taste. For spicy sausage, add more cayenne pepper or red pepper flakes to the meat mixture. For a sweet flavor, add maple syrup or brown sugar.

Instructions

1. In a large bowl, combine fresh ground pork, paprika, dried thyme, dried marjoram, garlic powder, onion powder, cayenne pepper, and salt (to taste). Use your hands or a spoon to thoroughly mix the seasonings into the pork until evenly distributed.

2. Form the homemade sausage patties. Divide the seasoned pork sausage mixture into 8 equal parts (per pound of ground pork). Roll each part into a ball. Place a ball of seasoned pork between two sheets of parchment paper. Use the bottom of a plate or a flat surface to press down firmly on the ball, flattening it into a patty. Make sure the patties are thin and slightly larger than desired as they will shrink and thicken during cooking process.

3. Heat avocado oil to a large skillet over medium-high heat. Carefully place the formed patties into the hot skillet in a single layer, leaving space between each one to allow for even cooking (you may need to cook in batches).

Cook the patties over medium heat for about 3-4 minutes on each side, or until they develop a nice brown crust and are cooked through. Use a spatula to flip the patties to the second side halfway through cooking.

4. Once cooked, transfer the sausage patties to a plate lined with paper towels to drain excess oil. Serve alongside your favorite breakfast sides such as eggs, hash browns, or in breakfast sandwiches.
