While it might seem like a gourmet dish reserved for special occasions, it's surprisingly simple to make. Picture this: tender chicken breasts filled with gooey mozzarella cheese, tangy sun-dried tomatoes, and vibrant spinach, seasoned to perfection and baked until lightly golden brown.

And here's the best part - this simple recipe takes minutes of preparation! Just a bit of pounding, stuffing, and baking, and you'll have a restaurant-worthy meal ready in 30 minutes.

While the first time you make it might take a little longer as you familiarize yourself with the steps, rest assured that the second time around, it'll become a breeze.

Ingredients

  • 3 chicken breasts (skinless, boneless)
  • 4 ounces Mozzarella cheese
  • 1/4 cup sun-dried tomatoes
  • 1 cup spinach (I use fresh baby spinach)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • avocado oil spray
  • salt
  • ground black pepper

Notes

Store any leftovers of this cheesy chicken spinach bake by allowing it to cool down to room temperature first, then transfer it to an airtight container. Keep it in the refrigerator for up to 3 days.

Instructions

1. Preheat oven to 400°F (200°C).
2. Prepare boneless skinless chicken breasts by cutting them lengthwise, but not all the way through. Open them up, place between two sheets of plastic wrap and use a meat mallet to gently pound them to an even thickness.

3. Season both sides of the chicken breasts with garlic powder, salt, and black pepper. Place two slices of mozzarella cheese on one side of each chicken breast. Top the mozzarella with sun-dried tomatoes, followed by a layer of fresh spinach.

4. Fold the chicken breasts over the filling, enclosing it completely. Use toothpicks to secure the edges of the chicken breasts and prevent them from opening during cooking.

5. Season both sides of the stuffed boneless chicken breasts with additional garlic powder, paprika, salt, and black pepper. Line a baking sheet / baking dish with parchment paper. Place the stuffed chicken breasts on the prepared baking sheet. Lightly spray the top of the  chicken breasts with avocado oil.

7. Bake in the preheated oven for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Keep in mind that cooking time may vary depending on your oven and the thickness of the chicken breasts.

8. Once cooked through, remove the toothpicks and serve the stuffed chicken hot. Enjoy!
