I'm always looking for easy recipes for a healthy breakfast. This Raspberry Baked Yogurt Recipe is a blend of simplicity and flavor.

Made with just five basic ingredients, it's bursting with fresh berries and has just the right amount of sweetness. The use of plain Greek yogurt ensures a protein-packed treat that is both satisfying and nutritious, while the eggs add healthy fats and additional protein.

One friend even refers to it as "yogurt cake" because it's so light, fluffy and delicious. This can be an easy breakfast option that you can enjoy warm or cold, or it can also serve as a healthier low calorie dessert.

  • 3 eggs
  • 1 cup Greek yogurt (plain)
  • 1 tablespoon tapioca starch (arrowroot or corn starch)
  • 2 tablespoons maple syrup
  • 1 cup raspberries (fresh)

Notes

Bake Time: The baking time may vary depending on your oven. It took about 37 minutes for me.

Yogurt: I use unsweetened yogurt for this berry yogurt bake recipe. You can use vanilla yogurt, but it usually contains added sugar.

Sweetness: Adjust the amount of maple syrup according to your personal preference. I find that 2 Tablespoons provide enough sweetness.

Storage: Store in the refrigerator in an airtight container or covered with plastic wrap.

Instructions

1. Preheat oven to 350°F (175°C).
2. In a large bowl, add the eggs, plain Greek yogurt, tapioca starch, and maple syrup. Whisk well until the mixture is smooth and fully combined.

3. Gently fold in the fresh raspberries, ensuring they are evenly distributed throughout the mixture.

4. Line a glass baking dish with parchment paper (I used 8" by 6" pyrex dish). Pour the mixture into the prepared dish, spreading it out evenly.

5. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the yogurt mixture is set.

6. Allow the baked yogurt to cool slightly. Enjoy it warm or refrigerate it for a few hours if you prefer it cold.
