Easy Canned Tuna Sushi Bake with Leftover Rice

Made too much rice yesterday? This Easy Canned Tuna Sushi Bake with Leftover Rice is the perfect next day meal that brings you the flavors of your favorite sushi roll, but without the fuss.

There’s no special equipment or bamboo mat needed, and no raw fish either, just creamy, spicy tuna baked over a layer of seasoned rice, then topped with fresh avocado, cucumber, and sesame seeds.

It’s ready in under 20 minutes, budget-friendly, and takes minimum effort - just the way I like it on busy days.

Ingredients

    Rice

  • 3 cups rice (white, cooked, I used medium grain rice)
  • 2 tablespoons rice vinegar
  • 2 teaspoons maple syrup
  • 1/2 teaspoon salt
  • Tuna

  • 2 cans tuna (drained)
  • 3 tablespoons avocado oil mayonnaise
  • 1 1/2 tablespoon sriracha sauce
  • 1 tablespoon soy sauce (I use low-sodium)
  • 1 tablespoon toasted sesame oil
  • Toppings

  • 1 tablespoon avocado oil mayonnaise (for drizzle)
  • 1 tablespoon sriracha sauce (for drizzle)
  • 1 avocado (thinly sliced)
  • 1 cucumber (thinly sliced, I use Persian cucumber)
  • sesame seeds (for topping)

Instructions

1. You can use a toaster oven for this recipe (I use my Cuisinart air fryer toaster oven), which doesn’t require preheating. If using a conventional oven, preheat it to 380°F (190°C).
2. Prepare the rice base. In a baking dish (I use an 8.5 × 6.5 inch (about 22 × 16.5 cm) Pyrex glass dish) combine the cooked rice with rice vinegar, maple syrup, and a pinch of salt. Mix well, then spread the rice mixture in an even layer and sprinkle with Furikake seasoning.

3. In another bowl, combine drained tuna, mayonnaise, sriracha, soy sauce, and toasted sesame oil. Use a fork to break up the tuna and mix until fully combined.

4. Spread the tuna mixture evenly over the rice layer. Drizzle with additional mayonnaise (I used a small ziploc bag with the corner snipped off) and sriracha sauce on top.

5. Bake at 380°F (190°C) for about 7 minutes.

Notes

  • You can use Kewpie mayonnaise for authentic Japanese flavor, but avocado oil mayonnaise is a great healthier alternative.
  • If you have sushi rice (short-grain Japanese white rice), it works well for this recipe.
  • If Furikake seasoning is hard to find, substitute it with a simple mix of toasted sesame seeds and nori sheet cut into thin strips.
