Easy Smoked Salmon Sushi Sandwich with Cucumber and Avocado

If you’re a sushi lover like I am and too lazy to make sushi rolls at home, you have to try this easy onigirazu sushi sandwich. It’s made with layers of rice, smoked salmon, cucumber, and creamy avocado with a touch of spicy sauce, all wrapped in a sheet of nori for a neat, hand-held bite.

Perfect for any time of the day, this Japanese sushi sandwich is perfect for a quick lunch or light dinner - simple, fresh, and full of flavor, without the hassle of rolling. You can also customize it with fillings of your choice, like cooked shrimp, crab, tofu, or extra veggies, to make it your own. Enjoy!

Ingredients

  • 1 nori sheet (square or rectangular)
  • soy sauce (for serving)
  • Rice

  • 1/2 cup rice (white, cooked, short-grain rice works best)
  • 2 teaspoons rice vinegar
  • 1 teaspoon maple syrup
  • 1 pinch salt
  • Fillings

  • 3 ounces smoked salmon
  • 1/2 avocado (sliced)
  • 1/3 cucumber (small, thinly sliced)
  • Spicy mayo

  • 1 tablespoon avocado oil mayonnaise
  • 1/2 teaspoon sriracha sauce
  • toasted sesame oil (I used a few drops)

Instructions

1. In a small skillet or saucepan, warm up the cooked white rice, then stir in rice vinegar, maple syrup, and a pinch of salt. Mix gently and let cool slightly.

2. In a small bowl, combine avocado oil mayo, sriracha, and a few drops of toasted sesame oil to make the spicy mayo.

3. Prepare the fillings: thinly slice cucumber and avocado, and have the smoked salmon ready.

4. Place a sheet of nori shiny side down on a cutting board. Add half of the rice to the center. Spread sriracha mayo on top of the rice, then layer smoked salmon, cucumber, and avocado slices. Add the remaining rice on top and press lightly.

5. Prepare a small bowl of water. Dip a brush (or your fingers) into the cold water and lightly moisten the edges of the nori to help it stick.

Fold the edges over the filling to close the sandwich, then wrap it tightly in plastic wrap and let it rest for 5–7 minutes so it holds its shape.

6. Unwrap, use a sharp knife to slice in half, and serve with soy sauce.
