Easy Oven Baked Chicken Nuggets with Panko Crust

These Panko-Crusted Chicken Nuggets are a hit with my whole family. Made with simple ingredients, they’re so much healthier than the typical fast food fried version, yet still perfectly crispy and delicious.

This is one of our favorite easy dinner recipes, especially when paired with homemade french fries.

Serve these homemade nuggets with your favorite dipping sauces - our go-to choices are honey mustard sauce or bbq sauce. 

Ingredients

  • 3 chicken breasts
  • 1 1/4 cup bread crumbs (panko)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 egg
  • 1 tablespoon water
  • avocado oil spray
  • parsley (fresh, chopped, for garnish)

Notes

To store leftovers of the panko chicken nuggets, let them cool completely, then place them in an airtight container and refrigerate for up to 3 days.

The best way to reheat is to place the nuggets on a baking sheet and bake until heated through and crispy again. You can also reheat them in an air fryer for a few minutes to maintain their crispiness.

Instructions

1. Preheat the oven to 400°F (200°C).
2. Cut boneless skinless chicken breasts into bite-sized pieces.

3. Spread panko bread crumbs on a parchment paper-lined baking sheet and bake for several minutes until they turn golden brown. Remove the toasted bread crumbs from the oven, add paprika, salt, onion powder, garlic powder, and black pepper. Stir to combine the seasonings with the bread crumbs.

4. In a bowl, whisk together egg and water using a fork.

5. Dip each piece of chicken into the egg mixture, then coat chicken in the seasoned panko mixture.

6. Spray a large wire rack with avocado oil cooking spray, then place the breaded chicken nuggets on the rack, ensuring they are in a single layer. Set the rack inside the baking sheet pan.

7. Bake in the preheated oven for about 18 minutes, or until the internal temperature measured by a meat thermometer reaches 165°F (74°C).
