Fluffy Homemade Pancakes Recipe without Milk

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 2 tablespoons ghee (melted, or melted butter if not dairy-free)
  • 3/4 cup water
  • 2 tablespoons avocado oil (for cooking)

Instructions

1. In a large mixing bowl, combine flour, baking powder, and salt.
Dry ingredients for milk-free pancakes: flour, baking powder, and salt.
2. In a separate bowl, whisk together egg, vanilla extract, maple syrup, plain water and melted ghee.
Wet ingredients for dairy-free pancakes: egg, vanilla, maple syrup and ghee.
3. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix, so the pancakes will be fluffier.

4. Heat half of the avocado oil in a large skillet over medium heat. Spoon the batter onto the skillet to form pancakes, making them approximately 3 - 4 inches wide.

5. Cook pancakes for a couple of minutes until small bubbles form on the surface, then flip and cook for another 2-3 minutes or until golden brown. Repeat with the remaining pancake batter, adding a little oil to the skillet between batches.
