High Protein Breakfast Tortilla with Smoked Salmon and Egg

Start your day with a nutritious and delicious high protein breakfast tortilla with smoked salmon and egg, one of my favorite easy breakfast recipes.

The best part? It doesn't require a lot of time to prepare. These tortillas are a healthier alternative to regular flour tortillas, made from cottage cheese, oats, and eggs.

Not only are they a great source of protein, but when paired with a runny egg and smoked salmon, the protein content of this easy breakfast increases even more. Plus, you get a dose of healthy fats and omega-3 fatty acids from the salmon.

This classic combination makes it one of my favorite smoked salmon breakfast recipes. What a great way to enjoy a delicious breakfast that will keep you feeling full and focused!

Ingredients

    Tortillas

  • 1 cup cottage cheese
  • 1 egg
  • 1/2 cup rolled oats
  • 1/3 cup water
  • Toppings

  • 6 ounces smoked salmon (I used smoked farm-raised salmon)
  • 4 eggs
  • dill (fresh, for garnish)
  • ground black pepper

Notes

I usually go for a fried egg with a runny yolk in this recipe, but scrambled eggs or poached eggs are awesome too. If you're up for it, you can even turn it into eggs Benedict with some creamy hollandaise sauce.

You can also add some fresh veggies such as thinly sliced red onion, green onions, fresh chives, spinach, tomatoes, or bell peppers for extra flavor and texture. For another twist, add a sprinkle of bagel seasoning.

Instructions

1. Prepare the batter. Add the cottage cheese, egg, rolled oats, and water to a blender cup. Blend with an immersion blender until smooth.

2. Heat a lightly oiled non-stick skillet over medium heat.
3. Pour enough of the mixture into the skillet to thinly cover the bottom. Spread the batter by moving the skillet in a circular motion to evenly distribute it (my tortillas were about 6.5" in diameter). Cook for 4-5 minutes or until the bottom is set.

4. Flip the tortilla and cook the other side until fully cooked. Repeat the process with the rest of the batter.

5. Prepare your eggs just the way you like them (poached, fried sunny side up, scrambled, jammy eggs...). Top each tortilla with an egg, smoked salmon, and a sprinkle of fresh dill and black pepper. Serve immediately and enjoy your high-protein breakfast!
