Mediterranean Cottage Cheese Wrap with Prosciutto & Spinach

Have you noticed the modern cottage cheese obsession on social media? I kind of like it! While I haven't tried cottage cheese ice cream yet, I have seen the viral cottage cheese wrap recipes making waves. There's even a cottage-cheese-only version out there, but as someone who's usually skeptical of single-ingredient recipes, I decided to take it to the next level by creating this Mediterranean Cottage Cheese Wrap recipe.

Making this wrap is very easy, using simple ingredients. Just blend together cottage cheese, eggs, Kalamata olives, oregano and garlic powder to create a delicious batter. Spread it thinly and bake until it's lightly browned. You get a pliable high protein wrap which you fill with mediterranean vegetables like fresh spinach, tomatoes, then layer with prosciutto.

This delicious wrap makes a great option for a nutritious breakfast or an easy lunch.

Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1 tablespoon Kalamata olives (sliced)
  • 1/2 teaspoon dried oregano (or Italian seasoning)
  • 1/2 teaspoon garlic powder
  • Fillings

  • 2 tablespoons avocado oil mayonnaise
  • 10 leaves spinach
  • 2 tomatoes (sliced)
  • 4 slices prosciutto

Notes

I use high-protein cottage cheese (like Good Culture 2%) to make cottage cheese wraps and always get good results. A lot of reviewers mentioned small curd varieties work best.

You can shape the wrap into a flatbread shape or make a tortilla version on stove top, depending on your preference.

To prevent sticking, make sure to use quality parchment paper. If you're unsure, spray your sheet of parchment paper with cooking spray before pouring the mixture.

Instructions

1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a blender, combine cottage cheese, whole eggs, Kalamata olives, oregano, and garlic powder. Blend until smooth.

3. Pour the mixture onto the prepared baking sheet and spread it into a thin layer using a rubber spatula.

4. Bake for 35-40 minutes, until the top is slightly browned. Allow the baked wrap to cool slightly.

5. Spread mayo evenly on one side of the baked wrap, and a little bit on the other end to help close the wrap. Layer spinach leaves on top of the mayo, followed by tomato slices, and finally prosciutto slices. Roll the baked mixture to enclose the filling, ensuring the mayo at the end helps to seal the wrap.
