

These soft apple farmer’s cheese cookies are tender, lightly sweet, and filled with small pieces of fresh apples. The farmer’s cheese gives them a delicate, almost cake-like texture, while also adding a boost of protein. Pure maple syrup brings natural sweetness and pairs perfectly with the apples and bright lemon zest. As they bake, your kitchen will fill with the warm aroma of apples, maple, and lemon, making them hard to resist.
I love that these apple cookies are made with simple, wholesome ingredients and come together quickly. They’re not overly sweet, which makes them perfect with a cup of tea or coffee.
The apples soften as they bake, creating little pockets of fruit in every bite. They are especially good while still slightly warm, when the cookies are soft and the apple pieces are tender.
Step 1: Preheat the Oven. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
Step 2: Mix the Wet Ingredients. In a large bowl, whisk together egg, maple syrup, avocado oil, lemon zest, lemon juice, and vanilla extract. 
Step 3: Add the Farmer’s Cheese and Dry Ingredients. Add the farmer’s cheese, flour, baking powder, and salt. 
Mix until a soft dough forms. 
Step 4: Add the Apples. Fold in the finely diced apples and mix until evenly combined. I like to use slightly wet hands to help incorporate the apples since the dough is soft. 

Step 5: Shape the Cookies. Form the dough into a log and divide it into 8 portions. 
Take each portion, divide it in half, and roll each piece into a ball using slightly wet hands. Place on the parchment-lined baking sheet and flatten slightly. 
Step 6: Bake. Bake for 20-25 minutes, until lightly golden. Let cool slightly before serving. 
Store these soft cookies in an airtight container at room temperature for up to 1 day, or refrigerate for up to 3-4 days.
