Easy Apple Cinnamon Pancakes Recipe (No Added Sugar)

These Easy Apple Cinnamon Pancakes are a healthier twist on regular pancakes, packed with the sweet apple flavor.

This is a great recipe for apple season, but it works wonderfully any time of year! It requires just 3 main ingredients - fresh apples, eggs, and a little bit of all purpose flour - with the rest just there to boost the flavor.

These delicious apple pancakes are one of my favorite ways to enjoy a cozy weekend morning. Simple to make, this easy apple pancake recipe is sure to become a go-to for any apple lover!

Ingredients

  • 2 apples (medium)
  • 2 eggs
  • 1/3 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • salt (a pinch)
  • 1 tablespoon avocado oil (or coconut oil, for frying)

Notes

If you have leftovers from these easy apple pancakes, allow them to cool to room temperature before storing them in an airtight container. They can be refrigerated for up to 3 days.

To reheat, simply place them on a parchment-lined baking sheet in a warm oven or toaster oven until heated through.

The level of pancake sweetness may vary depending on the type of apple you use. Sweeter apples like Fuji, Gala, Honeycrisp, or Red Delicious will naturally make the pancakes sweeter, while more tart varieties like Granny Smith, McIntosh, or Pink Lady will add a slight tang.

For those who prefer even sweeter pancakes, a drizzle of maple syrup on top will add an extra touch of sweetness.

Instructions

1. In a medium bowl, combine eggs, flour, vanilla extract, ground cinnamon, and sea salt. Whisk until the pancake batter is smooth.

2. Peel apples using a vegetable peeler, then use a grater to shred the apples.

3. Heat avocado oil in a skillet over medium heat. Once the oil is hot, spoon the batter into the hot skillet to form pancakes, using about 1/4 cup of batter for each. Fry the pancakes over medium-low heat for 2-3 minutes on the first side until golden brown. If they brown too quickly, cook over lower heat.
