Easy No-Bake 2-Layer Chocolate Coconut Bars Recipe

If you're a fan of coconut and chocolate, these easy no-bake coconut chocolate bars are the perfect dessert for satisfying your chocolate craving.

They remind me of my favorite flavors found in coconut candy bars (Bounty bars,  Almond Joy bars and coconut truffles Raffaello). The coconut layer is rich and chewy, with a sweet and creamy flavor that pairs beautifully with the smooth, decadent combination of chocolate.

Just 5 simple ingredients and a blender are all you need for this great recipe. This treat is undoubtedly the best way to satisfy your sweet tooth, and the best part is, you don't need to bake it. And you won't need to worry about spending time shaping them into individual bites or anything like that. Just press the mixture into a dish, chill, slice, and enjoy! The only problem? Trying not to eat the whole batch in one sitting!

 

Ingredients

    Coconut Layer

  • 2 1/4 cups coconut flakes (unsweetened coconut flakes or unsweetened shredded coconut)
  • 1/2 cup sweetened condensed milk
  • 1/4 cup ghee (or coconut oil)
  • 1 teaspoon vanilla extract
  • salt (a small pinch)
  • Chocolate Layer

  • 1 1/4 cup chocolate chips (I use semisweet chocolate, but dark chocolate chips work too)
  • 3 tablespoons ghee (or coconut oil)

Notes

Store any leftovers in an airtight container in the refrigerator for 1 week.

You may omit the blending step if using fine, extra shredded coconut, making this chocolate coconut bar recipe even quicker and easier. If omitting the step, make sure to use melted coconut oil or ghee.

Instructions

1. Prepare the coconut layer. Add coconut , sweetened condensed milk, ghee (or coconut oil), vanilla extract, and salt to a blender or food processor. Pulse several times until the mixture reaches a finer texture.

2. Press the coconut mixture onto the bottom of a parchment paper-lined glass dish (8" by 6”). Refrigerate for about 30 minutes to let it set.

3. Prepare the chocolate layer. Melt the chocolate chips and ghee (or coconut oil). I do this in a warm Cuisinart Air Fryer Toaster Oven, stirring the mixture every couple of minutes, until fully melted. You can also use a double boiler or a microwave. If using a microwave, heat in 30-second intervals, stirring in between, until fully melted and smooth.

4. Pour the melted chocolate mixture over the chilled coconut layer, spreading it in an even layer.

5. Refrigerate again until the chocolate is set, about 1-2 hours. Once the chocolate is firm, cut into bars and enjoy your delicious no bake chocolate coconut bars!
