Ingredients

  • 16 ounces cottage cheese (I use Trader Joe’s organic low-fat cottage cheese)
  • 1/3 cup peanut butter (creamy, unsalted)
  • 1/3 cup honey (can be maple syrup, or your sweetener of choice)
  • 1/3 cup chocolate chips (melted; if using chocolate bar, cut it into small pieces before melting)
  • 1/3 cup peanuts (chopped)

Instructions

1. First step: In a medium bowl, blend together cottage cheese, peanut butter, and honey until smooth using an immersion blender.


2. To melt chocolate chips, I use the “warm” setting on my Cuisinart Toaster Oven. You can also use a microwave: heat the chocolate in 20-second intervals, stirring in between until it's smooth. If it gets too thick, add a small spoonful of ghee to make it smoother.
3. Evenly distribute the blended cottage cheese mixture into individual dessert bowls.

4. Top with melted chocolate.

5. Sprinkle with chopped peanuts. Refrigerate for about 30 minutes and enjoy! Store leftovers in the fridge in an airtight container, though I doubt there will be any.

I cannot provide an exact amount of protein per serving. However, according to one of the comments from Pinterest, someone used MyFitnessPal to calculate that each serving contains approximately 18 grams of protein. - Alena

I changed my sweetener to liquid monk fruit drops and all natural pb no sugar or pb fit powder , use Lilly’s or hersheys sugar free chips and it’s in the keto range and did 6 servings

Peanut butter is loaded with sugar as well as all the sugar in honey or maple syrup. May be better than white sugar but has same calories This is a dessert with protein

I made these today and though they were good, I will use mini chips instead as the melted chocolate got very hard and did not work well when eating it.

Next time, try adding coconut oil or butter to your melted chocolate so that it's not too hard. I make homemade granola bars with chocolate topping and always add a tbsp of coconut oil to the chocolate chips so that we can easily bite into the bars through the chocolate topping.
