Easy Smashed Potato Waffles Recipe for Breakfast

If you’re tired of regular waffles, love savory waffles and potato pancakes like I do, this potato waffle recipe is a must-try!

Made with simple ingredients, these crispy and easy potato waffles are a delicious and fun way to change up your breakfast routine - and the best part is, you don’t even have to deal with waffle batter in this easy recipe!

They’re a great base for toppings like smoked salmon and cream cheese, which is my go-to combination. You can also try adding a fried egg on top, some crispy bacon bits, or a dollop of sour cream with chives - whatever your favorite potato topping is, it really takes these amazing potato waffles to the next level.

It’s a unique and creative way to serve potatoes that’s sure to please the whole family! The next time you're planning healthy breakfasts, give these potato waffles a go—they won't disappoint!

Ingredients

  • 4 potatoes (medium, I use Russet)
  • 4 ounces cream cheese (onion and chive one works great for extra flavor)
  • 4 ounces smoked salmon
  • dill (green onions or your favorite fresh herbs, for garnish)
  • avocado oil spray (or any nonstick spray)
  • salt

Notes

Store leftover waffles in an airtight container or a ziplock bag in the fridge.

For best results, reheat them in the oven (I use my Cuisinart Air Fryer + Convection Toaster Oven) on a parchment-lined baking sheet to achieve perfectly crispy waffles.

Instructions

1. Start by thoroughly washing the potatoes with the rough side of a dish sponge to remove any dirt. Place the cleaned potatoes in a medium-sized pot and cover them with water. Bring the pot of water to a boil over medium-high heat, then add salt - enough for the water to be salty. Cook the potatoes for about 20 minutes, or until they are fork-tender. Once the potatoes are cooked, carefully pour out the water and return the pot to the heat. Keep the heat on for a couple of minutes, gently shaking the pot to help the potatoes dry, then allow them to cool.

2. Preheat your waffle maker to a medium heat setting. Spray the waffle iron with avocado oil spray (or your favorite cooking spray) to prevent sticking.
3. Place one or two potatoes in the waffle maker, depending on its size, and press down with the top to smash them. Cook for about 5 minutes, or until the potato waffles are crispy and golden brown. Repeat with the remaining potatoes (spray some more oil before next batch).

4. Once the potato waffles are ready, top each with a generous spread of cream cheese, a slice of smoked salmon, and a sprinkle of fresh dill. Serve immediately and enjoy your delicious and easy smashed potato waffles for breakfast!
