High-Protein Cottage Cheese Strawberry Cheesecake Cups

If you have a sweet tooth but are on the hunt for healthier dessert options, these healthy cottage cheese cheesecake cups might just be your new favorite sweet treats.

I've been trying to incorporate more protein into my diet lately, and cottage cheese has become a go-to ingredient. With its high protein content cottage cheese is a great option to enjoy a creamy dessert without sacrificing nutrition.

After seeing various versions of cottage cheese recipes on social media, I decided to create my own high-protein cheesecake version using a combination of cottage cheese and Greek yogurt. These cottage cheesecake cups are made with simple ingredients and are incredibly easy to whip up. Topped with fresh berries for an extra burst of flavor, this dessert not only tastes great but also offers added health benefits.

Ingredients

  • 2/3 ounce freeze dried strawberries (adjust for flavor intensity)
  • 1 cup cottage cheese (I used low-fat cottage cheese)
  • 1/4 cup Greek yogurt (I used non fat Greek yogurt)
  • 1 egg (large)
  • 2 tablespoons maple syrup
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon vanilla extract

Notes

Store the leftover cheesecake cups in the fridge, covered with plastic wrap, or place the ramekins in an airtight container to stay fresh.

Instructions

1. Preheat the oven to 350°F (175°C).
2. Place the freeze-dried strawberries in a blender cup and blend into a fine powder (you can also use a food processor).

3. Add cottage cheese, Greek yogurt, egg, pure maple syrup, flour, and vanilla extract to the strawberry powder and blend until smooth and creamy.

4. Distribute the cottage cheese mixture evenly between greased ramekins and bake the cheesecake cups for 20 minutes, or until the centers are just firm.

5. Allow the cheesecakes to cool to room temperature, then refrigerate until chilled. Garnish with fresh strawberries and a touch of strawberry dust.
