Protein-Packed Peanut Butter Chocolate Oats Recipe

Plus, if you prefer softer oats with a creamy texture, you can let them sit overnight, just like an overnight oats recipe. Trust me, this delicious breakfast is a game-changer!

Ingredients

    Oat Layer

  • 1/2 cup almond milk (hot, can be coconut milk or oat milk)
  • 1/2 cup rolled oats (old-fashioned oats or quick oats)
  • 2 teaspoons chia seeds
  • 2 teaspoons honey (or pure maple syrup)
  • Yogurt Layer

  • 1/4 cup Greek yogurt (plain)
  • 1 tablespoon peanut butter (I use creamy, but crunchy peanut butter is great too)
  • Chocolate Layer

  • 2 tablespoons chocolate chips (I use dark chocolate chips, but chopped dark chocolate bar would work great too)
  • 1 tablespoon Greek yogurt (plain)
  • 1/2 teaspoon coconut oil
  • Topping

  • 1 banana (small, sliced)

Notes

You can swap peanut butter for almond butter, cashew butter, or sunflower seed butter if you prefer, though I personally love sticking with natural peanut butter.


To amp up the protein in your oats eve more, you can: 

- Mix in chocolate protein powder with your oats for an extra chocolatey flavor. 

- Sprinkle hemp seeds on top - they're a great source of plant-based protein. 

- Add more chia seeds or flax seeds to boost protein and fiber. 

- Top with chopped nuts like almonds or walnuts for added crunch and protein.

Instructions

1. Heat milk in a small saucepan. Combine the hot milk, rolled oats, chia seeds, and honey in a glass jar. Stir well to mix all the ingredients. Cover the jar with a lid and let it stand 10 - 15 minutes.

2. For the yogurt layer, in a small bowl, mix together plain Greek yogurt and creamy peanut butter until smooth.

Add the peanut butter yogurt layer on top of the oats.

Top with some of the sliced banana, or mashed banana if you prefer.
3. For the chocolate layer, melt chocolate chips and coconut oil together. I use the warm setting on my toaster oven. Alternatively, melt in the microwave in 30-second intervals, stirring after each, or use a double boiler on the stovetop. Stir in plain Greek yogurt until the mixture is smooth.

4. Spread the melted chocolate mixture over the banana. Garnish with some more banana slices. Enjoy now, or if you prefer softer oats, let them stand for a couple of hours or even overnight in the refrigerator.
