Notes

To keep finished truffles fresh and delicious, store them in an airtight container in the refrigerator. If you're having a party, the truffles can be left out at room temperature for a few hours.

Since we're not adding sugar, how sweet your truffles turn out will depend on the chocolate you pick. For sweeter truffles, opt for chocolate with a cacao content of 45-50%. Use high quality chocolate for the best flavor.

Feel free to experiment with different flavor combinations by using various freeze-dried fruits or berries. Some other options include raspberries, blueberries, or even pineapple.

You can also roll the truffles in different coatings such as unsweetened cocoa powder, finely chopped nuts, shredded coconut, or even powdered sugar to add variety and extra flavor.

Instructions

1. In a small saucepan, heat the coconut milk over medium low heat until it's hot but not boiling.

2. Add the chocolate chips and vanilla extract to the hot coconut milk. Stir until the mixture is smooth and chocolate is fully melted.

3. Line an 8x6 inch glass dish with parchment paper (or wax paper). Pour the melted chocolate mixture into the prepared dish. Use a rubber spatula to scrape all of the truffle mixture out of the saucepan. Refrigerate the chocolate mixture for about 1.5 - 2 hours, or until it's firm.

4. Crush freeze-dried fruit. Place freeze-dried strawberries in a small ziplock bag and crush them into a fine powder (I use a meat mallet). Repeat the process with the freeze-dried mangoes in a separate ziplock bag. Alternatively, you can use a small food processor to achieve the same result. Transfer the mango and strawberry dust to separate small plates.

5. Once the chocolate mixture is firm, cut it into squares (I got 12 squares).

6. Roll half of the truffle squares in the strawberry dust and the other half in the mango dust. Your delicious chocolate truffles are now ready to enjoy!
