This Moist Orange Cake is bursting with citrusy flavor and has a soft, tender texture that’s both paleo and gluten-free.

Made with almond flour and sweetened with maple syrup, it’s a wholesome treat that’s naturally grain-free and refined sugar-free. The whole orange gives the cake its fresh orange flavor, while optional orange extract and turmeric add depth and vibrant color.

Ingredients

  • 1 orange (navel oranges work well here)
  • 3 eggs
  • 3/4 cup maple syrup
  • 1/4 cup avocado oil
  • 2 cups blanched almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon orange extract (optional, for more intense flavor)
  • 1/4 teaspoon turmeric (optional, for more intense color)
  • powdered sugar (or confectioners' sugar, optional, for dusting)

Notes

Store cooled cake in an airtight container or covered with plastic wrap in the fridge to keep it fresh. It's just as delicious the next day!

Instructions

1. Preheat oven to 350°F (180°C).
2. Thoroughly wash and quarter orange, remove any seeds, and leave the orange peel on.
3. In a blender or a food processor, combine the quartered orange with the wet ingredients: eggs, maple syrup, and avocado oil. Then, add the dry ingredients - almond flour, baking powder, salt, turmeric and orange extract (if using). Blend until the mixture is smooth and well combined.

4. Line the bottom of an 8-inch springform pan with parchment paper. Pour the cake batter into the prepared pan.

5. Bake for about 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Baking time may vary depending on your oven.

6. For best results, let the cake cool to room temperature in the pan before removing. If you prefer a warm cake, allow it to cool just slightly. Dust top of the cake with powdered sugar, if desired, before serving.
